It\u2019s filling, it\u2019s packed with some of my favorite foods, and it\u2019s relatively cheap\u2026 Can the guac just be free already?!<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Since our move, we\u2019ve realized how much we used to eat out! When you live in walking distance to so many amazing restaurants, it\u2019s so easy to opt for eating out instead of meal planning and grocery shopping. We\u2019ve been working on planning out our weeks, leaning on our <\/span><a href=\"https:\/\/www.thehealthymaven.com\/cookbooks-for-weeknight-dinner-inspiration\/\"><span style=\"font-weight: 400;\">favorite cookbooks<\/span><\/a><span style=\"font-weight: 400;\"> for inspiration and <\/span><a href=\"https:\/\/www.thehealthymaven.com\/meal-prep-intuitively\/\"><span style=\"font-weight: 400;\">meal prepping intuitively<\/span><\/a><span style=\"font-weight: 400;\"> to eat in more. Now instead of regularly eating Chipotle, we\u2019re regularly eating a variation of these homemade chipotle bowls!&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">For basically the price of one serving, we can make four meals. These copycat Chipotle Burrito Bowls are a win!<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-in-chipotle-burrito-bowls\"><strong>Ingredients in Chipotle Burrito Bowls:<\/strong><\/h2>\n\n\n\n<p>What I love most about this chipotle burrito bowl recipe is that it can be as quick or involved as you want it to be. If you&#8217;re short on time you can buy store-bought versions of salsa, guac and even rotisserie chicken. If you&#8217;re more of a &#8220;from scratch&#8221; type of person I&#8217;ve included recipes for each.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Romaine lettuce<\/b>&#8211;<span style=\"font-weight: 400;\"> or any<\/span> leafy greens or lettuce<\/li>\n\n\n\n<li><b>Black beans<\/b><span style=\"font-weight: 400;\"> \u2013 I like to use canned beans so I don\u2019t have to think about pre-soaking and cooking my beans.<\/span> You could also use pinto beans or refried beans.<\/li>\n\n\n\n<li><b>Rice<\/b><span style=\"font-weight: 400;\"> \u2013 use brown rice, basmati white rice or cauliflower rice for extra veggies!<\/span><\/li>\n\n\n\n<li><b>Salsa<\/b><span style=\"font-weight: 400;\"> \u2013 I like chopping up fresh tomatoes for my <\/span><a href=\"https:\/\/www.thehealthymaven.com\/2015\/07\/the-best-ever-pico-de-gallo.html\"><span style=\"font-weight: 400;\">homemade pico de gallo<\/span><\/a><span style=\"font-weight: 400;\">, <a href=\"https:\/\/www.thehealthymaven.com\/fresh-corn-salsa-baked-chili-lime-tortilla-chips\/\">corn salsa<\/a> <\/span><a href=\"https:\/\/www.thehealthymaven.com\/2016\/07\/easy-pineapple-salsa.html\"><span style=\"font-weight: 400;\">pineapple salsa<\/span><\/a><span style=\"font-weight: 400;\"> but feel free to use store-bought if short on time.<\/span><\/li>\n\n\n\n<li><strong>Guacamole<\/strong> &#8211; go for my<a href=\"https:\/\/www.thehealthymaven.com\/traditional-guacamole-recipe\/\" target=\"_blank\" rel=\"noopener noreferrer\"> homemade authentic version<\/a> or pick up store-bought if short on time. Want extra veggies? Great. Like spice? There\u2019s a salsa for that. If you want to spruce up your homemade burrito bowl, here are some bonuses you could add:<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Sauteed veggies<\/b><span style=\"font-weight: 400;\"> \u2013 slice bell peppers and onions and saute in a little oil with salt and pepper.&nbsp;<\/span><\/li>\n\n\n\n<li><strong>Swap the chicken<\/strong> &#8211; prefer a different protein? Feel free to swap in beef, pork or even tofu for a vegetarian option.<\/li>\n\n\n\n<li><strong>Cheese<\/strong> &#8211; top with your favorite cheese. Monterey jack cheese, cheddar cheese or whatever you prefer works great!<\/li>\n\n\n\n<li><b>Corn<\/b><span style=\"font-weight: 400;\"> \u2013\u00a0Steam corn or get fancy and make <\/span><a href=\"https:\/\/www.thehealthymaven.com\/street-corn-dip\/\"><span style=\"font-weight: 400;\">street corn<\/span><\/a><span style=\"font-weight: 400;\"> by mixing sweet corn with mayo, paprika and cotija cheese.\u00a0<\/span><\/li>\n\n\n\n<li><b>Cilantro<\/b><span style=\"font-weight: 400;\">&nbsp; \u2013 I love finishing off my meal with fresh herbs. Cilantro pairs well with these burrito bowls. Or you can stir into your rice with a squeeze of fresh lime juice for cilantro lime rice.<\/span><\/li>\n\n\n\n<li><b>Chipotle aioli<\/b> \u2013&nbsp;I\u2019m in the camp that every meal is better with aioli. Just me?
