Maybe it\u2019s because I\u2019m a foodie but I have distinct memories when it comes to food! I wish I had this recipe back then because these energy balls are so dang delicious (and easy for college dorm dwellers to make)! This is another one of those, \u201cthrow everything into the food processor and you\u2019re good to go\u201d kind of recipes. No need to fuss around with the oven, or a list of 15 ingredients.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Since this recipe makes quite a few, they\u2019re perfect to make ahead for quick on-the-go breakfast and snacks. Store them in your fridge or freezer until you\u2019re ready to enjoy.<\/span><\/p>\n<div>\n<h2><strong>Blueberry Muffin Energy Ball Ingredients<\/strong><\/h2>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Mixed nuts<\/b><span style=\"font-weight: 400;\"> \u2013 I prefer cashews and almonds but you can use any combination!<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Dried Blueberries<\/b><span style=\"font-weight: 400;\"> \u2013 I can\u2019t even tell you how many people have asked if you can use fresh blueberries\u2026 dried is best for this recipe, sorry! &#8211; see note below.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Medjool Dates <\/b><span style=\"font-weight: 400;\">\u2013 one of my favorite natural sweeteners.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Vanilla<\/b><span style=\"font-weight: 400;\"> \u2013 vanilla extract works great but you can also use fresh vanilla if you\u2019re fancy.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Lemon zest <\/b><span style=\"font-weight: 400;\">\u2013 don\u2019t skimp on this. It really does add a ton of flavor!<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">You also need a food processor. I\u2019m obsessed with my <\/span><a href=\"https:\/\/amzn.to\/2PLGB9O\" target=\"_blank\" rel=\"nofollow noopener\"><span style=\"font-weight: 400;\">Cuisinart 14 cup food processor<\/span><\/a><span style=\"font-weight: 400;\"> and highly recommend it! Don\u2019t attempt to make this in your high-powered blender\u2026 I don\u2019t want to be responsible for any broken blenders.\u00a0<\/span><\/p>\n<h2><strong>Where to Buy Dried Blueberries<\/strong><\/h2>\n<p>These blueberry muffin energy balls require one very special ingredient: dried blueberries. Please do not use either fresh blueberries or freeze-dried blueberries. Here is where to find dried blueberries:<\/p>\n<ul>\n<li><strong>Trader Joe&#8217;s<\/strong> &#8211; They carry dried wild blueberries in the dried fruit + nut section for a very decent price<\/li>\n<li><strong>Bulk Barn<\/strong> &#8211; for my Canadian friends! Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 1 month.
