Baked eggs with whatever veggies you have on hand &#8211; or whatever is growing like crazy in your garden&#8230;aka KALE.<\/span><\/p>\n<h2><strong>Here\u2019s What You Need<\/strong><\/h2>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Eggs<\/b><span style=\"font-weight: 400;\"> \u2013\u00a0you can use one or two eggs but I typically use two!<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Shallot<\/b><span style=\"font-weight: 400;\"> \u2013 adds a delicious savory flavor. Feel free to sub with a 1\/4 cup of chopped onion instead<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Mushrooms<\/b><span style=\"font-weight: 400;\"> \u2013 any type of mushroom works but you can also sub in a different veggie.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Greens\u00a0<\/b><span style=\"font-weight: 400;\">\u2013 any type of green works but I like the flavor and texture of kale, spinach or chard in this recipe.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Salt and pepper<\/b><span style=\"font-weight: 400;\"> \u2013\u00a0to taste.<\/span><\/li>\n<li aria-level=\"1\"><strong>Optional &#8211; Cheese!<\/strong> &#8211;\u00a0 Just sprinkle on top right after baking!<\/li>\n<\/ul>\n<h2><strong>Flavor Variations<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">These baked eggs are completely customizable \u2013 swap out the veggies for whatever you have on hand. Cook for 3-5 minutes or until mushrooms are cooked down. Add greens and cook until wilted.
