I put my friend and former personal chef, Jess on the task of elevating a traditional carrot lentil soup and to say that she nailed it would be an understatement. It\u2019s packed with plant-based nutrition and a bold Thai curry flavor that I can\u2019t get enough of.&nbsp;<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-here-s-what-you-need\"><strong>Here&#8217;s What You Need<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Vegetables<\/b><span style=\"font-weight: 400;\"> \u2013 onion, ginger root and carrots.<\/span><\/li>\n\n\n\n<li><b>Lentils<\/b> \u2013 I used red lentils for this recipe but yellow lentils would also work.<\/li>\n\n\n\n<li><b>Full fat coconut milk<\/b> \u2013 I recommend using full fat canned coconut milk for the best, creamiest flavor!<\/li>\n\n\n\n<li><b>Vegetable broth<\/b> \u2013 I always opt for low-sodium broth so I can control how salty the final product is.<\/li>\n\n\n\n<li><b>Red curry paste<\/b> \u2013 I don&#8217;t recommend subbing for a different curry paste \u2013 the robust flavor of red curry paste pairs perfectly in this recipe!<\/li>\n\n\n\n<li><b>Avocado oil<\/b> \u2013 for saut\u00e9ing the vegetables.<\/li>\n\n\n\n<li><b>Coconut aminos<\/b> \u2013 soy sauce or tamari also works.<\/li>\n\n\n\n<li><b>Rice wine vinegar<\/b> \u2013 if you don&#8217;t have rice wine vinegar on hand, white wine vinegar also works.<\/li>\n\n\n\n<li><b>Maple syrup<\/b> \u2013 just a hint of natural sweetness to balance the flavors.<\/li>\n\n\n\n<li><b>Fish sauce<\/b> \u2013 can be omitted to make this vegan or vegetarian.<\/li>\n\n\n\n<li><b>Lime juice<\/b> \u2013 I recommend using fresh lime juice as opposed to store-bought!<\/li>\n\n\n\n<li><b>Seasonings and spices<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;cumin, coriander, turmeric and 1 stalk of lemongrass.<\/span><\/li>\n\n\n\n<li><b>Optional serving suggestions<\/b><span style=\"font-weight: 400;\">: brown rice, quinoa or cauliflower rice, avocado, cilantro, coconut\/greek yogurt, toasted coconut.<\/span><\/li>\n<\/ul>\n\n\n\n<p><span style=\"font-weight: 400;\">Heads up! That beautiful pink plant you see there is swiss chard which came in my <\/span><a href=\"https:\/\/www.thehealthymaven.com\/imperfect-produce\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">Imperfect Foods<\/span><\/a><span style=\"font-weight: 400;\">&nbsp;box and we figured we\u2019d throw it in. Season with salt.<\/span><\/p>\n\n\n\n<p><b>STEP 3:<\/b><span style=\"font-weight: 400;\"> Add the carrots to the pot along with the coconut milk and vegetable broth. Add the lemongrass and season with another pinch of salt. Bring to a simmer and cook until the carrots are soft. While the soup simmers, cook the lentils according to the package instructions.<\/span><\/p>\n\n\n\n<p><b>STEP 4:<\/b><span style=\"font-weight: 400;\"> Once the carrots are soft, transfer the soup to a high speed blender and blend until smooth. You can also use an immersion blender to blend everything right in the pot.&nbsp;<\/span><\/p>\n\n\n\n<p><b>STEP 5: <\/b><span style=\"font-weight: 400;\">Transfer the blended soup back to the pot and add in the coconut aminos, vinegar, lime juice, maple syrup and fish sauce (if using). This soup fits the bill! I recommend serving with brown rice, quinoa or cauliflower rice. Top with avocado, cilantro, Greek yogurt and toasted coconut for the ultimate flavor explosion.&nbsp;<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-store-leftover-soup\"><strong>How to Store Leftover Soup<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">One of the best things about soup is that you can make one batch and eat it all week long! Let the soup cool slightly before storing in an airtight container in the refrigerator for up to one week.
