The other day I was craving my <\/span><a href=\"https:\/\/www.thehealthymaven.com\/2013\/04\/roasted-vegetables-with-tahini-sauce.html\"><span style=\"font-weight: 400;\">Roasted Veggies with Tahini Sauce<\/span><\/a><span style=\"font-weight: 400;\"> but I was too lazy to go to the grocery store so I used what I had on hand and the end result was this amazing creation!\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I combined roasted cauliflower with roasted chickpeas and topped it with a tahini sauce and za\u2019atar. This might just be my new go-to side dish!<\/span><\/p>\n<h2><strong>Here\u2019s What You Need<\/strong><\/h2>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cauliflower \u2013\u00a0the base of this entire dish!<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Chickpeas \u2013\u00a0I like using canned chickpeas just for ease but you can definitely cook your own as well!<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Olive oil \u2013\u00a0you\u2019ll be roasting the chickpeas and cauliflower in olive oil. Another mild oil like avocado oil also works.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Tahini \u2013\u00a0the star of the sauce! It has a mild, nutty flavor.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Garlic- use fresh garlic for optimal flavor<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Lemon juice \u2013 I recommend using freshly squeezed lemon juice for the best flavor. \u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Za\u2019atar \u2013\u00a0a spice mixture that pairs perfectly with this dish!<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Sea salt \u2013\u00a0to season each component and bring all of the flavors together.\u00a0<\/span><\/li>\n<\/ul>\n<h2><strong>What is Tahini?<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">Tahini is made out of ground sesame seeds. It\u2019s vegan and gluten-free and has a delicious mild, nutty flavor. You can find tahini near the other nut and seed butters in the grocery store. It\u2019s such a versatile ingredient! I love it as a sauce but it\u2019s also delicious in this <\/span><a href=\"https:\/\/www.thehealthymaven.com\/tahini-date-cinnamon-smoothie\/\"><span style=\"font-weight: 400;\">tahini smoothie<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/www.thehealthymaven.com\/tahini-brownies\/\"><span style=\"font-weight: 400;\">tahini brownies<\/span><\/a><span style=\"font-weight: 400;\"> and <\/span><a href=\"https:\/\/www.thehealthymaven.com\/no-bake-tahini-chocolate-protein-energy-balls\/\"><span style=\"font-weight: 400;\">tahini energy balls<\/span><\/a><span style=\"font-weight: 400;\">.\u00a0<\/span><\/p>\n<h2><strong>How to Make Roasted Cauliflower with Tahini Sauce<\/strong><\/h2>\n<p><b>STEP 1: <\/b>Line two baking sheets with parchment paper or a silicone mat. Spread out cauliflower onto one sheet and drizzle with 1 tbsp of olive oil. Option to remove outer skins for crispier chickpeas. Drizzle chickpeas with 1 tsp olive oil and sprinkle with salt + pepper. Place chickpeas top rack + cauliflower on bottom rack. Bake chickpeas for 20 mins and cauliflower for 30 mins or until crispy + browned. Stir to form a paste.
