Let\u2019s be real, it\u2019s delicious either way but I\u2019m still grateful that I\u2019m done with the braces phase of life.&nbsp;<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">I first created this corn salsa as an appetizer or snack but quickly realized it can be a side or topping for a variety of meals and dishes. I love adding this salsa to <\/span><a href=\"https:\/\/www.thehealthymaven.com\/copycat-chipotle-chicken-burrito-bowl\/\"><span style=\"font-weight: 400;\">burrito bowls<\/span><\/a><span style=\"font-weight: 400;\">, this <\/span><a href=\"https:\/\/www.thehealthymaven.com\/quinoa-taco-salad\/\"><span style=\"font-weight: 400;\">quinoa taco salad<\/span><\/a><span style=\"font-weight: 400;\">, and even for topping off <\/span><a href=\"https:\/\/www.thehealthymaven.com\/spicy-grilled-shrimp-tacos-with-all-the-fixins\/\"><span style=\"font-weight: 400;\">tacos<\/span><\/a><span style=\"font-weight: 400;\">!<\/span> Honestly, it reminds me a lot of chipotle&#8217;s corn salsa!<\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">If you eat this fresh corn salsa on it\u2019s own as a snack, I highly recommend making these baked chili lime tortilla chips to go with it. Sure, it takes more time than buying a bag of chips but I promise you the time is worth it! If you\u2019ve never made homemade chips, it\u2019s super simple.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-in-corn-salsa\"><strong>Ingredients in Corn Salsa<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><span style=\"font-weight: 400;\"><strong>Large vine tomatoes<\/strong><\/span> &#8211; any variety will do. You could use canned tomatoes but I find fresh works best.<\/li>\n\n\n\n<li><span style=\"font-weight: 400;\"><strong>Fresh sweet corn<\/strong><\/span> &#8211; you&#8217;ll remove the corn kernels from the cob using a sharp knife. Alternatively you can thaw some frozen sweet corn.<\/li>\n\n\n\n<li><strong><span style=\"font-weight: 400;\">Garlic clove<\/span> + Red onion<\/strong> &#8211; finely chopped. Green onion will also work.<\/li>\n\n\n\n<li><span style=\"font-weight: 400;\"><strong>Cayenne pepper<\/strong><\/span> &#8211; I personally like to use a bit of cayenne in this corn salsa but you could also add another hot pepper like jalapeno, if desired.<\/li>\n\n\n\n<li><strong>Lime juice<\/strong> &#8211; use fresh lime juice for the best flavor. Alternatively if you prefer a little sweetness you can use lemon juice instead.<\/li>\n\n\n\n<li><strong>Salt + Pepper<\/strong> &#8211; add to your taste preference. Pulse tomato several times. Add fresh corn, garlic, red onion, cayenne pepper and lime juice to tomatoes and stir. It\u2019s delicious right then and there but when left to soak up all the lime and tomato juices it gets even more delicious. So fear now, cooked corn is not necessary for this recipe. These chili lime tortilla chips have a bomb of flavor that you can&#8217;t get from store-bought varieties.
