It wouldn&#8217;t surprise me if at some point over the last decade of The Healthy Maven that I&#8217;ve written a literal love letter to potatoes. Roasted, baked, grilled, steamed or fried, I do not discriminate. I love potatoes all ways, all days. These roasted fingerling potatoes are no exception. With grill season upon us, I love grilling up some<a href=\"https:\/\/www.thehealthymaven.com\/jalapeno-turkey-burgers\/\" target=\"_blank\" rel=\"noopener\"> burgers<\/a> or <a href=\"https:\/\/www.thehealthymaven.com\/tandoori-chicken-kebabs\/\" target=\"_blank\" rel=\"noopener\">kabobs<\/a> and pairing them with these roasted fingerling potatoes. Which is exactly what I was doing the other day when I realized I&#8217;ve never actually shared this recipe.<\/p>\n<p>It&#8217;s easy, it&#8217;s classic and you cannot go wrong with roasted potatoes. So next time you&#8217;re at the store, reach for a bag of fingerlings and give this recipe a try!<\/p>\n<h2><strong>What are Fingerling Potatoes?<\/strong><\/h2>\n<p>Potatoes come in all shapes and sizes and each has its own benefits! Fingerling potatoes are bite-sized potatoes that got their name because they&#8217;re shaped like fingers. They often come in different colors but all are delicious. Fingerlings tend to be <strong>waxier and thin-skinned<\/strong>. They are also<strong> lower in starch<\/strong> which makes them great for baking because they crisp up super well.<\/p>\n<p><strong>No need to peel<\/strong> your fingerlings either!<\/p>\n<h2><strong>Ingredients in Roasted Fingerling Potatoes<\/strong><\/h2>\n<p><em>This recipe couldn&#8217;t be easier. You really only need 3 ingredients!<\/em><\/p>\n<ul>\n<li><strong>Fingerling Potatoes<\/strong> &#8211; you need 1 1\/2 lbs. Generally sold in bags these size or measure them out<\/li>\n<li><strong>Olive oil<\/strong> &#8211; you can also use avocado oil if that&#8217;s all you have<\/li>\n<li><strong>Salt<\/strong> &#8211; I like sea salt but any salt will work<\/li>\n<\/ul>\n<p><strong>Optional toppings:<\/strong> You can also top these roasted fingerling potatoes with a few optional add-ons including: minced garlic, parmesan cheese or fresh or dried herbs. I personally like rosemary and parmesan but feel free to make these your own!<\/p>\n<h2><strong>How to Cook Fingerling Potatoes in the Oven<\/strong><\/h2>\n<p><strong>STEP 1<\/strong>: Preheat oven to 425 degrees F. Wash and scrub your fingerling potatoes. Set oven to 350 degrees F, spread on a baking tray and bake for around 10 minutes or until warm.
