I love how easily it comes together and the hands-off nature of the Instant Pot. I know some people are very much over the Instant Pot but I still use mine multiple times a week. We got it for our wedding and 5 years later we still love it!<\/p>\n\n\n\n<p><strong>Why Make this Recipe?<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nutritious<\/strong> &ndash;  First off, are lentils good for you? Yes!!! Lentils are an amazing source of plant-based protein and fiber. They also contain folate, iron and B1 which helps to support heart health, lowering bad cholesterol!<\/li>\n\n\n\n<li><strong>Minimal Dishes<\/strong> &ndash; not only is this lentil soup recipe a complete meal, but it can also be made quickly and with minimal dishes &ndash; all in the pressure cooker!<\/li>\n\n\n\n<li><strong>Easy Meal Prep<\/strong> &ndash;  soups can always be made in big batches so we&rsquo;re talking meals for days. I&rsquo;ve included leftover and freezer instructions below.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-in-instant-pot-lentil-soup\"><strong>Ingredients in Instant Pot Lentil Soup<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Olive oil <\/strong>&ndash; heart healthy option for saut&eacute;ing veggies<\/li>\n\n\n\n<li><strong>Yellow onion<\/strong> &ndash; you can also use a white onion if that&rsquo;s all you have<\/li>\n\n\n\n<li><strong>Carrots<\/strong> &ndash; to help build-out the flavor profile<\/li>\n\n\n\n<li><strong>Celery <\/strong>&ndash; keeps a little crunch and works great with onion and carrots.<\/li>\n\n\n\n<li><strong>Garlic<\/strong> &ndash; Ideally freshly minced garlic<\/li>\n\n\n\n<li><strong>Green Lentils<\/strong> &ndash; you can also use brown or red lentils. Make sure you use dried and not pre-cooked as the precooked kind will get mushy in the Instant Pot<\/li>\n\n\n\n<li><strong>Vegetable Broth<\/strong> &ndash; you can also use chicken broth or beef broth. Water works in a pinch.<\/li>\n\n\n\n<li><strong>Diced tomatoes <\/strong>&ndash; canned preferred but you can dice fresh tomatoes if that&rsquo;s all you have.<\/li>\n\n\n\n<li><strong>Herbs + Spices<\/strong> &ndash; Italian seasoning, dried coriander, bay leaf, salt and black pepper<\/li>\n\n\n\n<li><strong>Kale<\/strong> &ndash; Or any other dark leafy green.<\/li>\n\n\n\n<li><strong>Red wine vinegar <\/strong>&ndash; to add a little acidity. If you don&rsquo;t have, a different vinegar or even a squeeze of lemon juice will work.<\/li>\n<\/ul>\n\n\n<div class=\"block-tip cwp-inner\">\n\n<h2 class=\"wp-block-heading block-tip__title\" id=\"recipe-tip\">Recipe Tip<\/h2>\n\n\n\n<p>You&rsquo;ll also need an 8-quart Instant Pot for this recipe. I use the&nbsp;<a href=\"https:\/\/amzn.to\/2NmGT5I\" target=\"_blank\" rel=\"noreferrer noopener\">Classic Instant Pot Duo 7-in-1<\/a>&nbsp;and absolutely love it.<\/p>\n\n<\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-cook-lentil-soup-in-the-instant-pot\"><strong>How to Cook Lentil Soup in the Instant Pot<\/strong><\/h2>\n\n\n\n<p class=\"has-quaternary-background-color has-background\"><strong>STEP 1: SAUTE VEGGIES<\/strong><\/p>\n\n\n\n<p>Set Instant Pot to &ldquo;Saute&rdquo; mode on high. Add olive oil and onion and cook for 3-5 minutes. Stir well. Seal the lid and set the valve to close. Pressure cook on HIGH pressure for 15 minutes. Add in kale or other dark leafy green. Greens should wilt in heat of soup but if not place the lid back on and let it sit for a few minutes for kale to wilt. While I can&rsquo;t give specific instructions, this recipe should work with any pressure cooker you have.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1729788815134\"><strong class=\"schema-faq-question\"><strong>Can You Make This In the Slow Cooker?<\/strong><\/strong> <p class=\"schema-faq-answer\">Yes! I would saute your veggies first but then throw everything into the slow cooker or Instant Pot on slow cooker mode and cook for either 3 hours on HIGH or 6 hours on LOW.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1729788826709\"><strong class=\"schema-faq-question\"><strong>Can You Add a Protein?<\/strong><\/strong> <p class=\"schema-faq-answer\">For sure! Cooked sausage or bacon or shredded chicken both work well in this Instant Pot Lentil Soup. Allow to thaw on countertop for several hours or overnight in the fridge.
