I don\u2019t know if it\u2019s because all salads are not created equal or if I\u2019m just picky when it comes to salads! Well this squash salad definitely falls in the \u201cobsessed\u201d category. I love the mix of warm and cool ingredients, the fall flavors and the refreshing vinaigrette!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">This salad comes together really quickly \u2013 the part that takes the longest is roasting the squash but after you have that done, it\u2019s just a matter of mixing up the rest of the ingredients.<\/span><\/p>\n<h2><strong>Fall Squash Salad Ingredients:<\/strong><\/h2>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Acorn squash<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Baby arugula or green of your choice<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Pomegranate seeds<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Pumpkin seeds<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Maple syrup<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Olive oil<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Red wine vinegar<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Pomegranate juice<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Sea salt and pepper<\/span><\/li>\n<\/ul>\n<h2><strong>Acorn Squash 101 &#8211; Yes! You can eat the skin.<\/strong><\/h2>\n<p><span style=\"font-weight: 400;\">Acorn squash is a winter squash that is shaped similarly to an acorn! They\u2019re typically dark green in color with an orange patch near the stem. The inner flesh is yellow-ish orange, similar to butternut squash. It has a slightly sweet and nutty flavor but it\u2019s pretty mild. <strong>After cooking, the skin is fairly soft making it okay to eat!<\/strong> If you don\u2019t love the texture you can always remove the peel before cooking. Acorn squash is rich in vitamins and minerals, most notably vitamin C, potassium and magnesium.\u00a0<\/span><\/p>\n<p>Here&#8217;s how to chop your acorn squash for this fall squash salad:<\/p>\n<p>1. Chop off top and base of acorn squash.<\/p>\n<p>2. Slice acorn squash length-wise from top to bottom. Scoop out seeds.<\/p>\n<p>3. Dip each piece of squash into the mixture to coat both sides and then lay on a sheet of parchment paper or silicone-lined baking sheet.
