I prefer using canned chickpeas since it makes this recipe faster but you can also cook your own on the stove-top.<\/li>\n\n\n\n<li><strong>Red Onion<\/strong> &ndash; the best option when serving raw onion.<\/li>\n\n\n\n<li><strong>Cherry tomatoes<\/strong> &ndash; you can also use grape tomatoes<\/li>\n\n\n\n<li><strong>Cucumber<\/strong> &ndash; English cucumber or Persian cucumbers both work.<\/li>\n\n\n\n<li><strong>Bell Peppers<\/strong> &ndash; I prefer red bell peppers but use what you prefer.<\/li>\n\n\n\n<li><strong>Kalamata Olives<\/strong> &ndash; Make sure you buy pitted or pit them yourself before adding to salad.<\/li>\n\n\n\n<li><strong>Feta Cheese<\/strong> &ndash; Feel free to omit if vegan or dairy-free<\/li>\n\n\n\n<li><strong>Fresh Parsley<\/strong>&ndash; or other fresh herbs like fresh mint, fresh dill or even cilantro or basil.
