Bring mixture to a simmer. Once simmering reduce heat to low and add the browned chicken on top and nestle them into the rice. You could also use bone-in chicken thighs but note that you&rsquo;ll need to brown them a little longer because they take longer to cook.<\/li>\n\n\n\n<li><strong>Add some spice<\/strong> &ndash; Add a jalapeno to your blender to kick up the heat or sprinkle some red pepper flakes onto your bowls afterwards.<\/li>\n\n\n\n<li><strong>Swap the veggies<\/strong> &ndash; I like using bell pepper and green beans but you can stir in any veggies of your choosing. Peas, corn and even leafy greens are all great options.<\/li>\n\n\n\n<li><strong>Use lemon in place of lime<\/strong> &ndash; fresh lemon juice and zest can easily be used in place of lime if you prefer the taste.<\/li>\n<\/ul>\n\n\n<div class=\"block-tip cwp-inner\">\n\n<h2 class=\"wp-block-heading block-tip__title\" id=\"h-do-not-use-brown-rice\">Do NOT Use Brown Rice<\/h2>\n\n\n\n<p>I know it&rsquo;s tempting to use brown rice but it takes too long to cook and will make your chicken dry and veggies soggy.
