This pineapple chicken marinade is where it&rsquo;s at. Give your chicken a good bath in these flavors and then roast to your delight. It&rsquo;s the perfect meal-in-one that your whole family will love! <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-why-make-this-recipe\">Why Make This Recipe?<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Ready in 30 Minutes<\/strong> &ndash; okay fine I do encourage a little marinade time but you can skip it if you don&rsquo;t want to do it. Alternatively, marinate overnight to save you time!<\/li>\n\n\n\n<li><strong>One Pan<\/strong> &ndash; Everything can be cooked together on a sheet pan. I do like to serve this over rice but if you want to skip the rice that&rsquo;s just fine and you can cook everything together on the sheet pan. Minimal dishes &ndash; heck ya!<\/li>\n\n\n\n<li><strong>Gluten-Free <\/strong>&ndash; this recipe is gluten-free so a great option if you&rsquo;re celiac or gluten-sensitive.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-needed\">Ingredients Needed<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Chicken breast<\/strong> &ndash; boneless skinless chicken breast or use boneless, skinless chicken thighs, if preferred<\/li>\n\n\n\n<li><strong>Tamari<\/strong> &ndash; using tamari keeps this recipe gluten-free but if you don&rsquo;t have any and aren&rsquo;t gluten sensitive you can use soy sauce.<\/li>\n\n\n\n<li><strong>Pineapple juice<\/strong> &ndash; I like the pure pineapple juice (not from concentrate)<\/li>\n\n\n\n<li><strong>Maple syrup<\/strong> &ndash; honey or even brown sugar both work.<\/li>\n\n\n\n<li><strong>Sweet chili sauce<\/strong> &ndash; also called sambal oelek. In a pinch you can use ketchup and some red pepper flakes.<\/li>\n\n\n\n<li><strong>Garlic + ginger<\/strong> &ndash; for aromatics and flavor<\/li>\n\n\n\n<li>Tapioca starch &ndash; or arrowroot starch or cornstarch. This helps to thicken your sauce.<\/li>\n\n\n\n<li><strong>Sesame oil <\/strong>&ndash; for greasing your pan.<\/li>\n\n\n\n<li><strong>Veggies<\/strong> &ndash; I like to use red bell pepper and zucchini but you can use different veggies, if desired.<\/li>\n\n\n\n<li><strong>Fresh pineapple<\/strong> &ndash; I like to use freshly chopped pineapple chunks in this pineapple salsa.<\/li>\n\n\n\n<li><strong>Avocado<\/strong> &ndash; avocado + pineapple is *chefs kiss*<\/li>\n\n\n\n<li><strong>Shallot<\/strong> &ndash; to complete the salsa<\/li>\n\n\n\n<li><strong>Cilantro<\/strong> &ndash; feel free to omit if you don&rsquo;t like cilantro.<\/li>\n\n\n\n<li><strong>Rice<\/strong> &ndash; for serving, if desired.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-sheet-pan-pineapple-chicken\">How to Make Sheet-Pan Pineapple Chicken<\/h2>\n\n\n\n<div class=\"schema-how-to wp-block-yoast-how-to-block\"><p class=\"schema-how-to-total-time\"><span class=\"schema-how-to-duration-time-text\">Time needed:&nbsp;<\/span>35 minutes<\/p><p class=\"schema-how-to-description\"><\/p> <ol class=\"schema-how-to-steps\"><li class=\"schema-how-to-step\" id=\"how-to-step-1721236412651\"><strong class=\"schema-how-to-step-name\">Marinate chicken<\/strong> <p class=\"schema-how-to-step-text\">In a large bowl combine chicken pieces, tamari, pineapple juice, maple syrup, chili sauce, minced garlic, grated ginger and tapioca starch. Toss to combine in sauce. Broccoli, cauliflower, snow peas and asparagus are all great options.<\/li>\n\n\n\n<li><strong>Change the protein<\/strong> &ndash; This recipe uses chicken breast but chicken thighs also work great. You could sub in a different protein but note that baking time will need to be adjusted.<\/li>\n\n\n\n<li><strong>Use mango in place of pineapple<\/strong> &ndash; you could use mango in place of pineapple to make a mango salsa. You could also use mango juice but it&rsquo;s just harder t ocome by.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-storage-instructions\">Storage Instructions<\/h2>\n\n\n\n<p>Store leftovers in the refrigerator for up to 3 days. Reheat on stove top or in microwave.<\/p>\n\n\n\n<p>Chicken in marinade can easily be frozen in a freezer-safe bag for up to 3 months.
