I can\u2019t say this officially but this might be the fastest and easiest recipe I\u2019ve ever posted!<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">I love chicken salad for a few reasons! Obviously I love how simple it is to make but I also love how versatile it is <\/span><i><span style=\"font-weight: 400;\">and<\/span><\/i><span style=\"font-weight: 400;\"> how great it is for meal prep! Make it once and enjoy it all week\u2026 or for however long it lasts!<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-in-guacamole-chicken-salad\"><strong>Ingredients in Guacamole Chicken Salad<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>Avocados<\/b><span style=\"font-weight: 400;\"> \u2013 the avocados should be firm but give slightly when you apply pressure. Avoid super mushy or super firm avocados!<\/span><\/li>\n\n\n\n<li><b>Garlic clove<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;adds a savory flavor base &#8211; this is entirely optional if you prefer a garlic-free guacamole (which sometimes I do).<\/span><\/li>\n\n\n\n<li><b>Red onion<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;finely chopped to add a robust flavor base to this salad.&nbsp;<\/span><\/li>\n\n\n\n<li><b>Jalape\u00f1o<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;seeded and finely chopped to add a little heat! You can skip this step if you don\u2019t like jalapenos&nbsp;<\/span><\/li>\n\n\n\n<li><b>Chicken<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;you can either purchase pre-cooked chicken (rotisserie chicken works great for a shortcut!) or cook at home<\/span><\/li>\n\n\n\n<li><b>Lime<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;we\u2019ll be using all the juice from one lime<\/span><\/li>\n\n\n\n<li><b>Sea salt<\/b><span style=\"font-weight: 400;\"> and <\/span><b>black pepper <\/b><span style=\"font-weight: 400;\">\u2013&nbsp;to bring all of the flavors together.&nbsp;<\/span><\/li>\n\n\n\n<li><b>Cumin<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;adds a kick of flavor!<\/span><\/li>\n\n\n\n<li><b>Cilantro<\/b><span style=\"font-weight: 400;\"> \u2013 optional but I love adding this fresh herb to the salad!<\/span><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-shredded-chicken-3-ways\"><strong>How to Make Shredded Chicken [3 Ways!]<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\"><strong>1. Buy Store-Bought<\/strong> &#8211; This is my go-to method because it&#8217;s so easy and ensures this guacamole chicken salad is ready in under 5 minutes. Just purchase a pre-cooked rotisserie chicken and remove the chicken breasts. Shred using two forks or your hands.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\"><strong>2. Cook on stove-top<\/strong> &#8211; Coat two chicken breasts with salt + pepper. Add a little olive oil to a pan and cook chicken breasts on the stove-top over medium-high heat for 6-7 minutes per side or until the interior temperature reaches 165\u00baF. Let chicken cool slightly and then shred with 2 forks. You can also do this on your grill.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\"><strong>3. In the Instant Pot<\/strong> &#8211; Add two chicken breasts to your <a href=\"https:\/\/amzn.to\/3EG5Pu6\" target=\"_blank\" rel=\"nofollow noopener\">Instant Pot<\/a> and top with 1\/2 a cup of water or stock. Season with salt + pepper. Close lid and valve and pressure cook on HIGH for 10 minutes. Let naturally release steam for 10 minutes. Open lid and let cool slightly. You can shred chicken directly in Instant Pot.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-guacamole-chicken-salad\"><strong>How to Make Guacamole Chicken Salad<\/strong><\/h2>\n\n\n\n<p class=\"has-background\" style=\"background-color:#dce5b9\"><b>STEP 1:<\/b><span style=\"font-weight: 400;\"> <\/span><strong>MASH AVOCADO<\/strong><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Place the avocados in a large bowl and mash using a potato masher or fork. Here are some ideas:<\/span><\/p>\n\n\n\n<p><b>Bread<\/b><span style=\"font-weight: 400;\"> \u2013 add a scoop to a piece of bread or toast and enjoy! Want extra veggies? Add some greens to your sandwich.&nbsp;<\/span><\/p>\n\n\n\n<p><b>Crackers<\/b><span style=\"font-weight: 400;\"> or<\/span><b> tortilla chips<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;scoop up the chicken salad with crackers or tortilla chips. I love the salty, crunchy combo with the salad!<\/span><\/p>\n\n\n\n<p><b>On a salad <\/b><span style=\"font-weight: 400;\">or <\/span><b>with veggies<\/b><span style=\"font-weight: 400;\"> \u2013&nbsp;enjoy a salad on a salad! But for real, this chicken salad is delicious on a bed of greens or scooped with fresh veggies like carrots and bell peppers.&nbsp;<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-store-leftovers\"><strong>How to Store Leftovers<\/strong><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">This salad stores really well! Store any leftovers in an airtight container in the refrigerator for 5-7 days. This guacamole chicken salad may brown slightly after a few days but the lime juice should help prevent that.
